Cave cheese

The natural conditions in marl caves are beneficial to the realisation of cave cheese. Ideal pure air and a very constant temperature give the cheese a perfect, mild aroma and a characteristic flavour thanks to a bath in cave beer.

Dairy Farm ’t Wanthof makes various types of cave cheeses:

  • the Reverend type: round shape, soft structure and a spicy flavour; and
  • the Gouda type: square shape, harder structure and a softer flavour.

To give them their characteristic flavour, both types of cheeses are washed in cave beer and matured in the marl caves of Zichen-Bolder.
